4 beets, peeled and cut into 3/4-inch cubes
2-3 tablespoons olive oil
1 pinch sea salt, or to taste
1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment or aluminum paper.
2. Toss the beets with olive oil, in a bowl until beets are coated
3. Arrange the pieces of beet on a baking sheet so that they don't touch. Sprinkle the beets with sea salt.
4. Roast the beets in a preheated oven until the beets are tender, 15 to 25 minutes. A fork inserted into a beet cube should come out easily.
