2 medium cooking apples such as Rome Beauty, Granny Smith
¼ cup raisins, dried cranberries or mixed dried fruits bits
2 tablespoons red cinnamon candies (optional)
1 tablespoon packed brown sugar
1/3 cup apple juice or water
1/3 cup caramel ice cream topping (optional)
1 tablespoon maple syrup
1 cup vanilla frozen yogurt
Chopped walnuts or pecans (optional)
Core apples: Peel a strip from the top of each place apples in a 2 quart square baking dish
1. Combine the raisins, cinnamon candies and brown sugar, spoon into centre of apples.
2. Pour apples juice into baking dish.
3. Bake uncovered in a 350 degrees oven for 50 to 55 minutes or until the apples are tender basting occasionally during baking
4. Meanwhile for topping in a small bowl combine caramel topping and the maple syrup, set aside.
TO SERVE: halve warm apples lengthwise. Transfer apple halves to dessert dishes. Top each with a scoop of frozen yogurt. Drizzle with toppings. If desired sprinkle with nuts. Serve immediately.
