Creamy Mushroom Pork

Difficulty: Easy - for beginners


1 pound pork tenderloin
2 ounces red apple smoked Gouda cheese, shredded
1/2 pepper
1 tablespoon canola oil
1/2 cup natural chicken broth
8 ounces sliced mushrooms
1/2 cup whipped cream cheese spread
1 teaspoon Dijon mustard with Chardonnay
1 teaspoon sliced green onions


Cut pork into 8 one-inch slices. Preheat large, non-stick saute pan on medium-high 2-3 minutes. Season pork with pepper. place oil in pan, then add pork. cook 2-3 minutes on each side or until browned. Reduce heat to medium-low. add broth and mushrooms, simmer 4 minutes. Remove pork from pan. whisk in cream cheese, mustard, and until melted. Stir in onions. return pork to pan and simmer approx 4 minutes until pork is 145 degrees F.
