Basic italian salad dressing

1 cup vegetable oil or olive oil
1/4 cup white wine vinegar
2 tbsp red wine vinegar
1 to 2 garlic clove, pressed
2 to 3 tbsp finely chopped shallots
2 tbsp finely chopped red bell pepper
2 tsp Dijon mustard
1 tsp liquid honey
1 to 2 tsp salt
1 tbsp fresh oregano (or 1/4 tsp dried oregano)
1 tbsp fresh marjoram (or 1/4 tsp dried marjoram)
Pinch of red pepper flakes
Freshly ground black pepper, to taste


Combine all ingredients in a jar with a tight fitting lid and shake well, or whisk vigorously in a bowl using a fork, until well blended and homogenous. Will keep well in the refrigerator for a week or 2.
