Crunchy Nutty Muffins

1/2 cup butter
1 egg
1 cup milk
1 teaspoon vanilla
2 cups flour
1/3 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 cup chopped walnuts


1 tablespoon butter
2 tablespoons flour
1 tablespoon brown sugar
1/3 teaspoon cinnamon


Place 12 paper baking cups in a muffin tine. Preheat oven to 375 degrees F. In small bowl, whisk egg until well beaten. Melt 1/2 cup of butter. Stir butter, milk and vanilla in with egg. In a large bowl, mix together the flour, sugar, baking powder, salt and walnuts, Pour wet ingredients into the dry ingredients and stir gently until well mixed. (batter will be lumpy. Melt the tablespoon butter. In a small bowl, mix the melted butter with the other ingredients for the topping. Fill muffin cups 2/3 full. Sprinkle 1 teaspoon topping over each muffin. Bake for 25 minutes until golden brown. Cool in the tin for 10 minutes..
