Crock Pot Sweet and Sour Pork

Ingredients

2 tbsp PLUS 1 1/2 tsp paprika
1 1/2 pounds boneless pork loin roast, cut into strips
1 tbsp. canola oil
20 ounce can unsweetened pineapple chunks
1 medium onion, chopped
1 medium green bell pepper, chopped
1/4 cup cider vinegar
3 tbsp. brown sugar
3 tbsp. reduced sodium soy sauce
1 tbsp. Worcestershire sauce
1/2 tsp salt
2 tbsp. cornstarch
1/4 cup cornstarch
1/4 cup cold water
hot cooked rice or noodles

Method

Place the paprika in a large resealable plastic bag. Add the pork, a few pieces at a time and shake to coat. IN a nonstick skillet, brown the pork in oil in batches over medium high heat. transfer to a 3 quart slow cooker.
Drain the pineapple, reserving the juice; refrigerate the pineapple. add the pineapple juice, onion, green pepper, vinegar, brown sugar, soy sauce, Worcestershire sauce and salt to the slow cooker; mix well. Cover and cook on low for 6-8 hours or until the meat is tender. Combine the cornstarch and the water until smooth; stir into the pork mixture. add the pineapple. cover and cook for 30 minutes longer or until sauce is thickened. serve over pasta or rice.
