4 1/4 cups chopped peaches
1 box powdered pectin
1 Tablespoon lemon juice
6 cups sugar
1/2 teaspoon butter or margarine.
Place peaches, pectin, lemon juice and butter in a large pan. Bring to a rolling boil over high heat, stirring constantly. Add sugar and bring to a rolling boil that cannot be stirred down. Continue to boil for 1 minute, stirring constantly. Remove from heat and skim any foam that is on top of the jam with a metal spoon. Fill hot jars immediately to within 1/2-inch of the tio of the tops. Wipe jar rims and threads. Cover quickly with hot lids and screw bands tightly. As the jar cools, the lids should seal down.
