Creamy Shrimp Pasta

4 tablespoons grape seed oil
1/3 cup diced yellow bell pepper
1/3 cup diced orange bell pepper
2 minced garlic cloves
1 jalapeno, diced
1 cup baby shrimp
1 cup half and half
¼ scallions, chopped
1 tomato, chopped
2 pinches Cajun seasoning
2 cups Whole Wheat precooked Penne Pasta
3 tablespoons feta cheese


Heat grape seed oil in pan over medium-high heat. Add yellow bell pepper, orange bell pepper, garlic, and jalapeno to skillet. Sauté for 1 to 2 minutes. Add shrimp, salt, pepper, Cajun spice, scallions and cook for 1 to 2 minutes. Add half and half, tomatoes, pasta, feta cheese and cook for 1 to 2 minutes
