Tomato Mincemeat

8 quart green tomatoes, washed, stems removed and cut into quarters
2 lemons, cut into pieces
4 pounds brown sugar
2 pounds raisins
1 cup vinegar
2 teaspoons ground cloves
1 tablespoon ground allspice
1 tablespoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground mace


In a small mixing bowl, mist vinegar and spices. Set aside. Chop tomatoes and lemons inside a food chopper. In a large pot, stir together tomatoes, lemons, sugar raisins, and spice mixture. Cook about 45 minutes over high heat, stirring occasionally. Pour into sterilized jars and seal.
