Easy Vegetable Lo Mein

2 (3 ounce) packages Ramen noodle soup mix
1 tablespoon butter
1 (16 ounce) package frozen vegetable combination, thawed
1 (8 ounce) can water chestnuts, drained
1/2 cup roasted soynuts
1/2 cup stir-fry sauce


Remove seasoning packat from ramen noodles. Discard or use for another recipe. Cook noodles according to package directions. Drain. Melt butter in 10-inch skillet until sizzling, add thawed vegetables and water chestnuts. Cook over medium-high heat, stirring occasionally, until vegetables are heated through (3 to 4 minutes). Add cooked noodles, soynuts and stir-fry sauce to vegetables. Continue cooking, stirring occasionally, until heated through (2 to 3 minutes).
