1 cup sliced celery
1 (15 ounce) can black beans, rinsed, drained
4 Roma tomatoes, cut into 1/4-inch slices
1 medium yellow and/or green bell pepper, cut into 1-inch pieces
2/3 cup salsa
!/3 cup sour cream
1 tablespoon lime juice
4 lettuce leaves
1 cup cubed (1 inch) garlic toast or homestyle garlic croutons.
Combine all salad ingredients in a large bowl. In a medium bowl, combine all dressing ingredients except croutons. Whisk well with a wire whisk. Place a lettuce leaf on individual plates. Top with 1 1/4 cups salad mixture. 1/4 cup dressing, 1/4 cup croutons.
