Loaded Veggie Quiche

Ingredients:

Crust:
1 ¼ c flour
¼ tsp salt
7 tablespoons butter (I recommend Smart Balance)
2 tbsp cold water
(You may need a little more mix b/c last time I made this there wasn’t enough dough).

Filling:
3 eggs
½ c milk
Salt pepper
Broccoli
Red pepper

Ingredients

Mushrooms
Shredded cheese (try a three-cheese blend)

Method

Prep: Wash your hands thoroughly. Make the crust by putting the flour, salt and butter together in a bowl and mix together with your fingertips so that it becomes crumbly. Add the water 1 tablespoon at a time until it is no longer dry. Mix into a dough ball. Then wrap the dough ball in clingwrap and place in the refrigerator for one hour.

When 45 mins has passed, put the red pepper in the oven in tin foil. This takes about 30 mins to cook, depending on how well done you want it. Cut the broccoli and put in a bowl. Pour olive oil over broccoli, add a pinch of salt and pepper and mix. Then put on tin foil in the oven (350 degrees F). This takes about 10 mins to cook.

Take the dough ball out of the fridge after one hour. Sprinkle a large cutting board with flour so it doesn’t stick. Roll out the dough with a rolling pin. Put the dough in a pie dish, pushing the edges up to form a crust. Then place in the oven at 350 F for about 10 mins.

Crack three eggs in a bowl and whisk. Add ½ c milk and a pinch of salt and pepper.

Saute mushrooms, onion, and red pepper on the stove. The broccoli will already be cooked thoroughly. Put all veggies in a bowl with the egg mixture. Stir together, then pour into the crust. Sprinkle cheese on top and place in oven for about 15 mins, checking occasionally. Let cool a few mins before serving. Eat!
