1- 1/4 C flour
1/3 C sugar
1/4 t salt
1 stick (8 T) butter, softened
1 egg yolk
Canned pie filling
Mix dry ingredients thoroughly and then mash them into the softened butter with a fork. When the mixture is uniformly crumbly, blend in one egg yolk. It will still be quite crumbly. Press firmly into the bottom and up the sides of greased muffin tin cups; mini muffin size works best. Dollop in pie filling. (I used cherry and blueberry.) Bake at 400F for 16 min. Allow to cool slightly in pan before removing.
