Pan Seared tofu with Mango Salsa

Ingredients

FOR THE TOFU
About 750 grams tofu
Juice of ½ lemon
Salt and freshly ground black pepper
2 tablespoons oil

For the Mango Salsa:
1 mango
1 onion, chopped
1 red and 1 green jalapeno, seeded and chopped
1 tablespoon chopped fresh cilantro leaves or Basil leaves
1 clove garlic, minced
1 teaspoon rice wine vinegar or dry vermouth
Salt and freshly ground black pepper

Method


FOR THE MANGO SALSA

Peel the mango, deseed and dice the mango.
In a bowl, stir in the onion, cilantro/basil, garlic, and vinegar/vermouth. Season with salt and pepper. Set aside and chill in a fridge.

FOR THE TOFU

Rub the tofu with the salt and lemon juice and let it sit for 30 mins.

Heat a large sauté pan over medium-high heat and then add the oil. Place the tofu in the hot pan and sear until golden on 1 side( 3 to 4 minutes).

Turn the tofu over and cook until cooked through, another 3 to 4 minutes. Be careful not to overcook .

Place a mound of rice on each plate. Top with grilled tofu. Spoon the mango salsa over the tofu.
