Veggie Salsa

A slightly sweet hot salsa that is good on tortilla chips

3/4 cup jalapeno pepper, chopped
2 cups red onion, coarsely chopped
1 1/2 cups green peppers, coarsely chopped
3 - 4 garlic cloves, minced
1 can (5.5 ounce) tomato paste
1/2 cup white vinegar
1/2 cup fresh parsley, coarsely chopped
1/2 teaspoon ground cumin
2 cans (28 ounce) diced tomatoes


in a large saucepan, combine all ingredients. Boil gently for about 45 minutes, stirring occassionally. Fill hot sterilized pint jars with salsa to within 3/4 inches. Place lids and rings on. Process in a boiling water bath for 20 minutes.
