Brie En Croute

6 frozen puff pastry shells
3 (4 ounce) Brie cheese rounds
water for edges
1 large egg yolk
1 tablespoon water


Roll shells out on a floured surface to a six-inch circle. place Brie cheese in center of three pastries. Top each with remaining pastries. Dampen edges with water. Crimp and seal edges. Set on ungreased cookie sheet. In small bowl, fork-beat egg yolk and water. Brush tops of pastry. Bake at 375 degrees F for about 20 minutes until golden brown.
