Cranberry Muffins

Difficulty: Easy - for beginners


1 cup fresh (or frozen) cranberries, chopped
1/3 cup granulated sugar
1 large egg
1/3 cup granulated sugar
1/4 cup cooking oil
1 cup milk
2 cups flour
1 tablespoon baking powder
1/2 teaspoon salt


In small bowl, combine cranberries and first amount of sugar. Set aside. In large bowl, mix egg, second amount of sugar and cooking oil. Add milk. Mix well. Set aside. In medium bowl, combine remaining ingredients. Add to egg mixture. Stir until moistened. Add cranberry mixture. Stir gently. Fill greased muffin cups 3/4 full. Bake at 400 degree F for 18 to 20 minutes. Let stand in pan for 5 minutes before removing muffins to wire rack to cool.
