1/4 cup butter, softened
2/3 cup granlated sugar
1 large egg
1/2 teaspoon vanilla
2 cups sliced strawberries
1 teaspoon lemon juice
2 cups flour
2 teaspoons baking powder
1 teaspoon baking soda
In large bowl, cream together butter and sugar. Beat in egg and vanilla. Set aside. Cut up strawberries. Mash, a few at a time, adding berries with any juice to egg mixture. Stir until just moistened. Turn into greased mini-bundt pans. bake at 350 degrees F for about 30 minutes. Let stand in pans for 10 minutes befre removing loaves to wire rack to cool.
