Apricot Mini loaf

1/2 cup butter, softened
2/3 cup granulated sugar
1 large egg
1 teaspoon vanilla
3/4 cup milk
2 1/4 cups flour
1 1/2 teaspoon baking powder
1 cup dried apricots, chopped


In large bowl, cream margarine and sugar. Beat in egg. Add vanilla and milk. Mix well. Set aside. In medium bowl, combine four, baking powder and apricots. Add to egg mixture. Stir until moistened. Soak 6 clay pots (4 inches in diameter at top) in water. Turn batter clay pots. Bake at 350 degree f for about 30 minutes. Let stand in pots for ten minutes. Turn out on wire racks to cool.
