Difficulty: Easy - for beginners
Chinese Chew's from my Mama's own hand written recipe.
1 Cup flour
1 tsp baking powder
1/4 tsp salt
1/2 cup sugar
2 eggs well beaten
1 Tablespoon butter
1 cup dates cut fine
1 cup chopped nuts
Sift dry ingred. together and mix with eggs until well blended Add dates and nuts. Spread thin on a 10X14 pan and bake in 375 degree oven 15 minutes (or until dry on top). while warm, cut in squares and roll in ball in powdered sugar and then put on 5 more pounds...........
That is just as she wrote it to me - but if you recall she did not always make them into balls and just had them in squares with powdered sugar. Also, she told me to roll the dates into some flour before putting them into the batter to keep them from sinking to the bottom of the pan. Denny and I would often try to beat each other in getting the most of these in our tummy's. This was a sign of a real Christmas season for us when we were kids.
