Ingredients

100g butter (unsalted)
200ml cream
1 egg
300g sugar
Juice & zest of 1 lemon
500g plain flour -seived

Method

Cream butter then add sugar, egg, cream, lemon and flour in order. Knead to a very soft, delicate dough and cool in the fridge for 2hrs.

Heat iron and form dough into small cherry-sized balls. Cook in iron approx 1 min
