French Canadian Tourtiere

A delicious French Canadian meat pie.

Preparation time: 30-45 minutes
Cooking time: 375 for 15 minutes then lower to 350 for 20 to 30

Difficulty: Easy - for beginners
Serves: 6 to 8


1 1/2 lbs ground pork
1 1/2 lbs ground veal
1 lb ground beef
NOTE: You can use all pork or beef. I use pork
2 small onions, chopped
2 cloves garlic, peeled and minced
2 medium red or white potatoes, peeled boiled, drained and mashed * save potato water
salt & pepper to taste
1/4 tsp ground cinnamon
1/4 tsp dry mustard
1/2 tsp each of, ground cloves, thyme, allspice & sage.

Pie dough, enough for 3 double crust pies, homemade or store bought. I use store bought.


Cook meat until it has lost it's pink colour, on med-high heat. Then add the 1 cup of the potato water or water to moisten and simmer on low for 1 hour along with the spices.

*You do not have to use all the above spices- use according to taste* I use all spices.

Pour cooled meat mixture into prepared pie shells, cover with top pie dough. make small slits into top of pie dough.

Bake in a pre-heated oven at 375F for 15 minutes, then reduce heat to 350f for 20 to 30 minutes.

These pies freeze well, unbaked or baked.
