BORTSCH (Beetroot Soup)

this is the traditional clear soup version of the humble vegetable. Packed with nutrition all the way this soup is surely going to warm up and energise your winters.

Ingredients

Beetroot Soup ( Bortsch)
This is the traditional clear soup variation of beetroot. One can even make the creamy rich soup by adding milk and lightly whipped double cream to it.
INGREDIENTS
raw beetroot 500gm
carrots 2
onion 1 large
garlic clove 1
tomatoes 2 medium or one can add lemon juice 2-3 tbsp instead .
chopped fresh coriander 2-3 tbsp
crushed/chopped ginger 2-3 tbsp
a few twigs of lemon grass ( i added this for extra flavour)
crushed black pepper 2tsp
salt to taste
vegetable stock/ water 1l /5cups

Method

METHOD
In a pressure cooker put beetroot, carrot,onion,garlic,salt,lemon grass,ginger,tomatoes,coriander.
Add the stock or water to the ingredients above.
Pressure cook for 3-4 whistles.
Strain in a large wok.
In a grinder puree the leftovers and add to the wok.
Bring to a boil.Add the black pepper. add lemon juice now in case tomatoes are not added.
Season more according to your taste.
Garnish with fresh coriander or parsley and serve hot
