Balsamic Carrots and Parsnips

1 pound carrots, thinly sliced
1 pound parsnips, thinly sliced
2 tablespoons canla oil
1/4 teaspoon pepper
3 tablespoons brown sugar
3 tablespoons chicken broth
3 tablespoons balsamic Vinegar
1/2 cup dried cherries
2 tablespoons fresh parsley, coarsely chopped
4 ounces feta cheese, crumbled


Peel carrots and parsnips, slicing into 1/4-inch thick slices and place in microwave-safe dish. Cove and microwave on high for 3 minutes. Preheat large sautee pan on medium-high for 2 to 3 minutes. Place oil in pan. Add carrots, parsnips and pepper. Cook and stir 3 to 4 minutes or until tender. In small mixing bowl, combine sugar, broth, vinegar, and cherries. Mix until cherries are coated. Add to carrot mixture. Cook, stirring constantly, for 2 - 3 minutes or until mixture thickens, Arrange vegetable in serving dish. Top with parsley and feta.
