Coffee Fudge

2 cups granulated sugar
1/2 cup milk
1 tablespoon instant coffee grounds
1 tablespoon corn syrup
1 tablespoon butter
1/2 teaspoon vanilla


In a 3-quart heavy saucepan, combine first five ingredients. Heat, stirring constantly, on medium-high heat until sugar is dissolved and the mixture starts to boil. Cover. Cook for about 3 minutes until steam washes down any crystals on inside of pan. Remove cover. Boil slowly for about 30 minutes, without stirring, until mixture reaches soft ball stage. Remove from heat. Cool until bottom of pan can be placed on hand. Add vanilla. Beat until thickened. Pour into greased 9x5x3 inch pan. Cool.
