After-Dinner Mints

Difficulty: Easy - for beginners


1/2 cup water
3 envelopes (1/4 ounce each) unflavored gelatin
1 1/2 tablespoons peppermint flavoring
2 cups confectioner's sugar
1/4 teaspoon baking powder
4 cups confectioner's sugar


In medium saucepan, put in water. sprinkle with gelatin. Let stand 2 minutes. Heat and stir on medium until gelatin dissolves. Remove from heat. Add next three ingredients. Mix well. Add last ingredient. Mix with hands. (mixture is sticky) Turn onto lightly floured counter. Knead dough until creamy. Divide into 4 portions. Cover portions not being used with plastic wrap. Roll first portion into long cigar-like ropes about 1/2 inch in diameter. Make slices about 1/2 inch apart with scissors. Place on wax-papered baking sheet. Let stand for one hour. Repeat with with remaining portions. Store in plastic bags.
