Difficulty: Medium - experience needed
1 1/2 cups water
3 envelopes (1/4 ounce each) unflavored gelatin
2 1/4 cups granulated sugar
1 teaspoon vanilla
1 tablespoon confectioner;s sugar
In medium saucepan, place water. Sprinkle gelatin over top. Let stand 1 minute. Add sugar and vanilla. Heat, stirring constantly until gelatin and sugar is dissolved. Remove from heat. Cool until you can almost hold your hand on side of pan. Beat on high for 15 to 20 minutes until stiff peaks form. Sift confectioner's sugar into 9x13 inch pan until bottom is coated. Turn Marshmallow mixture into pan. Chill. Cut into small squares.
