Nutty Brittle

Difficulty: Difficult - for experienced cooks


1 1/2 cups granulated sugar
1 cup white corn syrup
1/2 cup water
2 tablespoons butter
2 teaspoon vanilla
1 teaspoon baking soda
1 cup white almonds with skin
1 cup cashews
1 cup dry roasted peanuts


In heavy metal saucepan, combine first 3 ingredients. Heat, stirring constantly, until sugar dissolves and boiling begins. Boil, stirring occasionally, until hard-crack stage. Remove from heat. Add remaining ingredients. Mix well. Immediately pour onto large greased baking sheet. Quickly lift and pull mixture into about 14 x 12 rectangle. Cool completely on baking sheet. Break brittle into small pieces. Store in tightly covered container.
