MINI MAPLE PECAN MUFFINS

Ingredients

1/3 c coconut flour
2 tsp arrow root
1/2 tsp sea salt
2 eggs
1/2 c coconut milk (thia or regular)
2 tsp vanilla
1/4 c coconut oil
2 TBSP maple syrup unrefined

1/2 c raisins *optional
1/2 c pecans
1 TBSP cinnamon

Method

1. Preheat Oven to 350.
2. Set aside pecans and raisins, combine all other ingredients in a med. bowl and use a hand mixer to stir. When mixed well fold in raisins and pecans.
3. Roll into ping pong size balls
4. Smash into mini muffin pan, taking care to preserve attractive appearance as no rising will occur (No need to grease the pan)
5. Bake for 18 -20 mins
6. Dust top of muffins with cinnamon
