Classic Collard Greens

2-3 lbs. washed & cut collard greens
8 bacon slices chopped
1 medium yellow onion, chopped
2 garlic cloves, minced
3 cups liquid (water or chicken broth)
Add'l liquid may be added during cooking process
4 Tbsp. apple cider vinegar
2 Tbsp. honey
1 smoked ham hock
salt & pepper to taste


Wash Collards, remove stems, and chop Collard leaves. Cook bacon in a large pot over medium heat stirring occasionally until almost crisp. Add onion and cook until tender. Add garlic and sautee for 1 minute more. Stir in liquid (water or broth), vinegar, honey, and ham hock. Bring to a boil and add collards in batches as they begin to cook down. Add additional liquid as needed to cover collard greens. Reduce heat to medium-low, cover pot with a lid and cook about 2 hours or to desired tenderness. Remove meat from ham hock, chop and add back to pot. Discard bone. Season with salt and pepper.
