Difficulty: Easy - for beginners
1 17.6 oz package gnocchi
1 T extra virgin olive oil
1/2 red onion, diced
4 cloves garlic, minced
3 italian sausages, casings removed and crumbled
1 tsp garam masala
1 dried red pepper
1/4 cup white wine
10 cups chopped kale
salt and pepper
parmesan for the top
Saute the onions until they are soft, about 4 minutes, add the sausage and garam masala and brown all over. Add the garlic, saute for a minute.
Add the wine and deglaze the pan, then add the kale. Season with a bit of salt and pepper. Toss until kale is wilted.
Cook the gnocchi and toss in olive oil. Add pasta water to sausage mixture til juicy. Top gnocchi with sausage mixture and finish with parm. Save any leftovers of the sausage/kale to make soup later in the week.
