Love Me Tender Chicken Bake

Difficulty: Easy - for beginners


1 medium onion, chopped
3 celery ribs, chopped
1/4 c. butter, cubed
2 1/2 c. cubed chicken (I use rotisserie)
5/8 c. water (1/2 cup and half of a 1/4 cup)
1 (10 3/4 oz) can condensed cream of chicken soup, undiluted
1/2 c. (4 oz) sour cream
1 (8 oz) can sliced water chestnuts, drained
1/2 c. sliced almonds, toasted
1/2 c. crushed butter flavored crackers


In a large skillet, sauté onions and celery in butter until tender. Add chicken and water. Heat through. Remove from the heat. Stir in the soup, sour cream, water chestnuts and almonds. Pour into 8" X 10" baking dish. Sprinkle with cracker crumbs. Bake, uncovered, at 400 degrees for 20 - 25 minutes or until bubbly.
