Beer Batter Fried Veggies

Difficulty: Easy - for beginners


1 envelope onion soup mix
1 cup flour
1 teaspoon baking powder
2 eggs
½ cup beer
1 tablespoon prepared mustard
4 to 5 cups of broccoli, cauliflower, sliced mushrooms, sliced zucchini


In deep-fat fryer, heat oil to 3750 F. Meanwhile, in large bowl, beat all ingredients except veggies until smooth and well blended. Let batter stand ten minutes. Dip veggies into batter and carefully into hot oil. Fry turning once, until golden brown. Drain on paper towels. Serve warm.
