Onion Swiss Steak with Mushrooms

This is a great throw in a skillet and let it go meal and a favorite of the guys in our home. It uses boneless round steak or you can use cube steak too.

Preparation time: 15 minutes
Cooking time: 40 minutes.

Difficulty: Easy - for beginners
Serves: 6


1 to 1/2 lbs. boneless round steak

Flour Mixture
2 T. flour
1/4 t. salt
1/8 t. pepper

1 1/2 c. water
1 med, onion, finely chopped (about 1/2 c.)
1 - 2 T. olive oil
1/2 t. salt
1/8 t. pepper
1 can Cr. of Mushroom soup (if using reg. Campbells cut back on salt)
8 oz. fresh button mushrooms, cleaned and sliced
2 T. beef bouillon
1 t. onion powder
1/2 t. garlic powder


Mix flour, salt and pepper together. Sprinkle 1/2 of the flour mixture on one side of the beef. Pound flour mix in tenderizing the meat. Turn meat over. Sprinkle remaining flour mix into other side and pound. Cut beef into serving pieces. 5-6 serving pieces pound, 6-8 if 1 1/2 lbs.

Heat oil in large skillet. Cook beef on medium, turning once, until brown about 10 minutes. Reduce heat. Add 1/2 c. water, chopped onions, sliced mushrooms and remaining spices. Mix 1 c. water with mushroom soup and bouillon. Pour mixture evenly over top of meat, onions and mushrooms. Bring to boil, cover and reduce heat. Simmer about 40 mins until meat is tender, checking and stirring about half way through.

Serve with mashed potatoes. My F-I-L used to say the gravy in this was "better than dessert!"
