Spicy Penne Rosa with Chicken (or without)

Ingredients

Optional - Chicken - Make before Penne Rosa
1/2 - 3/4 lb. chicken breast meat or tenders (8-12 oz.)
1 T. melted butter
1/4 c. bread crumbs
1/4 c. parmesan

Penne Rosa
1 16 oz. bag Penne Rosa noodles
2 T. olive oil
24 oz. jar spicy marinara sauce (or one 16 oz. jar of marinara sauce mixed with 1 c. salsa)
1 clove garlic, minced
1/4 t. red pepper flakes
1/2 c. sour cream
4 oz fresh button mushrooms, cleaned and sliced
1 1/2 - 2 c. chopped grape or Roma tomatoes (2-3)
1/4 c. Chardonnay or other white wine
5 oz. baby Spinach (about 2 cups)
grated Parmesan
Salt and pepper to taste

Method

If you want this with chicken - dip chicken in butter then bread crumb / parm. mix. Heat 1 - 2 T olive oil in skillet and fry chicken tenders or breast until done (white in center, slightly browned.)

Prepare Penne Rosa noodles as directed on pkg. Drain.

In large skillet add olive oil, garlic, onions and mushrooms. Saute until tender, add tomatoes and red pepper flakes. Stir and cook for a few minutes. Deglaze pan with 2 T to 1/4 c. white wine. Add noodles, marinara, sour cream and salt and pepper. Stir in spinach. Turn off heat. Let spinach wilt, stirring once more. Serve with grated Parmesan. I have added mozz on top of the dish to melt in as well.
