Difficulty: Easy - for beginners
2 cups whole buttermilk
2 tablespoons pepper sauce
1/2 teaspoon cayenne pepper
3 3/4 pounds cut-up chicken
2 tablespoons Chipotle & roasted Garlic Seasoning
1 box (10.5) Jalepeno Cornbread Crackers, finely crushed
In large bowl, combine buttermilk, pepper sauce, and cayenne pepper. whisk until blended. Season chicken with chipotle seasoning. Place chicken in buttermilk mixture. turning ocassionally to coat. Let stand in refrigerator at least thirty minutes. Preheat oven to 400 degrees F. Coat baking sheet with spray. Place crackers in shallow bowl. Drain chicken, discarding mixture. Coat both sides of chicken evenly with crumb mixture. Place chicken on baking sheet. Coat top of chidken with spray. Bake 18-20 minutes until well-browned.
