Coconut Crusted Mahi

This can be spiced up by adding a bit of pepper sauce before dipping in the egg, or adding cumin or other spices to the crust mix.

1/2 cup panko
1/2 cup fresh grated coconut
1 T flour
2 T butter, melted
Cooking spray
4 fish filets such as mahi or grouper
salt and pepper
Coconut oil


preheat oven to 425 degrees
IN a bowl combine the panko, coconut, flour and melted butter
spray rack or broiling pan with cooking spray to avoid sticking
salt and pepper filets and plac eon rack.
Cook in the oven for about 10-15 minutes..keep an eye on it..cook until crust is golden
Let fish rest for 10 minutes and serve
