2 red or yellow peppers
1 medium potato
pint crimini mushrooms
1/2 stick butter
salt & pepper
shard onions & make long slender pepper strips. Starting with the peppers, sautee hot in half the butter, adding onions & then mushrooms last. Use a big pan: we're looking for al-dente, not mush.
Salt & Pepper to taste along the way. Maybe some soy sauce, even.
grate the potato into shreds, mix with milk, eggs, chopped cilantro & flour.
Mix everything together in a mixing bowl,
Back in the frying pan like pancakes, but cook 'em lots, 'till crispy maybe flipping twice.
