Aunt Helen's Fruit Upside Down Cake

Ingredients

1 1/2 c brown sugar
fruit (pineapple, peaches, or apples)
3 egg yolks
1 c sugar
1 Tbs hot water
1 c flour
1 tsp baking powder
3 egg whites, stiffly beaten

Method

Butter a pan generously. Cover with brown sugar. Cover with peaches, pineapple, or apples.

Beat together the yolks, sugar, and water until light. Mix in flour and baking powder. Fold in the egg whites.

Bake 1 hour in a moderate oven
