Aunt Helen's "Fred's Birthday Cake" Recipe

1/2 c flour
7/8 c sugar
grated rind of one orange
juice of 3 good sized oranges
enough water to make 1 1/4 c liquid
beaten yolks of 3 eggs

5/8 c butter
1 1/2 c sugar
grated rind of 1 orange
1 Tbs orange juice
4 egg yolks
3/4 c milk
2 1/2 c cake flour
3 1/4 tsp baking powder
3 egg whites, beaten


Make the filling first. Mix flour and sugar together. Put them into the top of a double boiler. Add grated rind, orange juice, and water. Cook stirring constantly until mixture thickens. Add beaten yolks of 3 eggs. Cook until very thick. Put through a fine mesh strainer. Cool. This mixture will be spread between the layers of the cake.

To make the cake, cream together the butter and sugar. Add the grated orange rind and orange juice. Fold the beaten yolks into the mixture. Add the milk and flour into the mixture by alternating them until all mixed. Add the baking powder. Fold in the beaten egg whites. Bake in three 9-inch layer pans.

When the cake is cooled spread the filling between the layers. Ice the whole cake with 7-minute icing or any good boiled icing.
