Aunt Helen's Persimmon Pudding

2 c dark brown sugar
1/2 c butter
1 qt sweet milk
2 qts persimmon (about 6 c pulp)
3 eggs, well beaten
1 tsp (slightly rounded) baking soda


Cream butter and sugar together. Put milk and persimmons through the collander. Sift soda and flour together. Add flour mixture into milk mixture. Beat all together well. Bake in a moderate oven for 1 hour.

To keep it from being dry to slice like a cake, stir it occasionally while baking.
