Aunt Helen's Fresh Apple Cake

2 c diced, peeled apples
1 c sugar
1 egg
1 c sifted all purpose flour
1 1/2 tsp cinnamon
1 tsp baking soda
1/2 c chopped nuts

1/2 c packed brown sugar
1/2 c white sugar
2 Tbs flour
1 c water
1/4 c butter
1 tsp vanilla


Mix sugar with apples and let stand until sugar is dissolved. Add egg and beat well. Sift dry ingredients together. Stir dry ingredients into apple mixture. Add nuts and pour into an 8" square baking pan. Bake at 375 F for about 40 minutes or until done. Immediately cover with topping while both the cake and the topping are warm.

For the topping, cook flour, sugar, and water together until clear. Add butter and vanilla. Stir until the butter melts, then pour over cake while both are still hot.

For optimum flavor serve warm. You can reheat this in a 300 F oven for about 15 minutes.
