Aunt Helen's Carrot Cake

Ingredients

Cake
3 c grated carrots
2 c sugar
1 1/3 c wesson oil
4 eggs
3 c flour
2 tsp baking soda
1 1/2 tsp cinnamon
1 tsp salt
1/2 c chopped nuts

Icing
3 oz cream cheese
1/2 c butter
2 c powder sugar
1 tsp vanilla

Topping
1/2 c nuts, choped

Method

Mix together cake ingredients. Bake at 300 for about an hour.

Let the cake cool.

Beat the icing ingredients together until fluffy.

Spread the icing over the cooled cake. Sprinkle nuts over top of the icing.
