Difficulty: Easy - for beginners
10 lbs tart apples
3 - 5 c sugar
4 sticks cinnamon
1/2 gal apple cider boiled down to 2/3 volume
1 lemon, thinly sliced
Peel, core and cook apples until tender in just enough water to prevent sticking. Strain. Place in a large roaster. Stir in sugar, spice and cider. Set in a slow oven for 6-8 hours. Stir every 25 minutes. Add lemon during the last hour of baking. Remove cinnamon and pack in hot jars. Seal.
