Raisin Rice Pudding

Difficulty: Easy - for beginners


1/2 c raw rice
1 1/2 c evaporated milk
1 1/2 c water
1/2 c seedless raisins
1/3 c butter
3 eggs, beaten
1/2 c sugar
1 tsp vanilla
1/4 tsp salt
1 tsp nutmeg


Mix rice with 1 c water and 1 c evaporated milk in the top of a double boiler. Cook over hot water until tender. Add raisins and butter.

Combine eggs, sugar, vanilla, salt, and remaining milk. Pour into a greased 1 1/2 qt baking dish. Sprinkle with nutmeg.

Set in a pan half full of warm water.

Bake in a slow oven at 325 F for 30 minutes or until set.
