Lemon Pudding Pound Cake

Difficulty: Easy - for beginners


4 eggs
1 pkg 2 layer yellow cake mix
1 pkg 3 1/2 oz instant lemon pudding
1/4 c water
1/2 c cooking oil

1/2 c lemon juice
2 c sifted powder sugar


Beat eggs until thick and lemon colored. Add cake mix (dry), pudding mix (dry) water, and oil. Beat at medium speed for 10 minutes. Pour into ungreased 10 inch tube pan with removable bottom.

bake at 350 for 50 minutes.

Make the glaze while the cake cooks. To make the glaze combine the lemon juice and powder sugar, heat to boiling.

Remove the hot cake on the pan bottom (remove just the sides). Using a 2-tined fork prick holes in the top of the cake. Drizzle the glaze over the top and spread on the sides of the cake.
