Sweet Potato Casserole

Difficulty: Easy - for beginners


2 1/4 pounds seet potatoes, peeled and cut into large pieces
1/4 pound butter, softened
1/4 cup granulated sugar
1/4 cup light brown sugar
1/3 cup milk
2 large eggs, beaten
1 teaspoon vanilla
1/8 teaspoon ground nutmeg
6 tablespoons butter, melted
1 cup light brown sugar
1/2 cup sugar
1 cup chopped pecans


Place the potatoes in a large saucepan and cover with cold water. Bring to boil. Cover. Boil slowly until tender. Drain potatoes thoroughly and mash until until smooth. Beat in next seven ingredients. Spoon into 3 quart buttered baking dish. Preheat oven to 350 degrees. In medium bowl, combine remaining ingredients except pecans. Stir in nuts. Sprinkle over potato mixture. Bake 35 to 40 minutes until topping is lightly browned.
