6 ears fresh corn
1/4 t. salt
3 t. finely chopped fresh cilantro
3 T. olive or canola oil
1/2 t. ground cumin
1/4 t. garlic powder
1/4 t. ground red pepper (cayenne)
1. Preheat grill. Brush grill rack with oil. Place corn on grill over med-high heat. (300 degrees) Cover and cook 8 min, turning occasionally until lightly browned on all sides.
2. Meanwhile in sm. bowl mix salt and cilantro. Set aside.
3. In sm. non-stick skillet, mix 2 T. oil and the cumin. Cook over med heat about 30 seconds, stirring frequently until fragrant. Stir in garlic powder and red pepper. Brush cumin mixture over hot corn. Sprinkle with cilantro/salt mixture.
