Difficulty: Easy - for beginners
1/4 lbs Egg noodles (spaghetti)
3/4 cups Parmesan cheese
2 tbsp Butter
2 tbsp Plain flour
1 cup Heavy cream
1 cup Broth
2 cups Turkey
2 Egg yolks beaten (only yolks?)
Salt al gusto
Preheat oven 200 C (375 F). Butter baking dish. Cook noodles, drain and spread out in the buttered baking dish. Stir in cheese, keep 2 tbsp.
On a separate pan, melt butter, add flour and cook for 2-3 min. Gradually stir in cream and broth, cook for another 5 min. Add meat and cook for another min. Beat 1/4 cup of the sauce into the yolks, then add back into the mixture. Add salt to taste.
Pour the mix over the noodles evenly, sprinkle with remaining parmesan and bake for 20 min or until golden.
