Eggplant Deep Fried

Eggplant slices battered and deep fried

Difficulty: Easy - for beginners
Serves: 8-10


1 Medium size Eggplant
1 egg
Milk or Buttermilk (if you have it on hand)
self-rising flour


Wash and peel your eggplant. You can either slice into french fries, I like to slice mine into rounds.
Take 1 egg and beat up well. Add about 1/3 cup of milk or buttermilk. Then pour about 1/2 cup of self-rising flour into a square pan or Pyrex pan, salt and flour both sides.
Drop into hot vegetable oil and cook til brown and crisp.
Drain on some paper towels.
